2 lb Pork Loin I like Grass Roots Coop ½ cup Grainy Mustard I like Noble Made 1 teaspoon Pepper 10 oz Bacon

Preheat oven to 425˚ and line a baking pan with parchment paper.
Prepare the pork loin by patting it dry with paper towels.
Spoon the grainy mustard over the top of the pork loin.
Place your bacon horizontally on a cutting board slightly overlapping.
Carefully move your pork loin on top of the bacon slices.
Sprinkle with pepper.
Wrap the bacon over the pork loin in a criss cross manner.
Move to your parchment lined pan.
Bake for 25-30 minutes or until the bacon is crisp and the internal temperature of the tenderloin reaches 145˚ degrees at the thickest part.
Remove from oven and let stand 10 minutes before slicing.
