Lemon Pepper Scallops

These air fried Lemon Pepper Scallops are to die for! Sweet, succulent, buttery scallops coated in Lemon Pepper nut crumbs....are you drooling yet? I served them over Cauliflower rice mixed with spinach, a little garlic and ghee and it was the perfect dinner! Next time I will be doubling this recipe as we ate the whole pound of scallops ourselves. Sorry not sorry!

Ingredients
  

  • 1 lb Scallops
  • 1/4 cup Arrowroot Powder
  • 1/2 tsp Salt
  • 1 tsp Garlic Powder
  • 2 Tbsp Ghee
  • 1/2 cup Lemon Pepper Nut Crumbs I like Nut Crumbs - you may need another 1/4 cup
  • 1 Lemon cut in wedges for garnish
  • 1/4 cup Parsley Flat Leaf, chopped for garnish

Method
 

  1. Pat scallops dry with paper towels.
  2. In one bowl, mix arrowroot with salt and garlic powder.
  3. Melt ghee in a second bowl.
  4. In a third bowl, place nut crumbs - see note
  5. Spray air fryer basket with oil.
  6. Toss scallops in arrowroot mix.
  7. Then one at a time, dip in ghee and let excess drip off.
  8. Then roll in the nut crumbs to coat.
  9. Place into the air fryer trying not to touch one another.
  10. Continue until all are coated and in the basket.
  11. Set air fryer to 400˚
  12. Cook 7 -10 minutes depending on scallop size. Larger ones take 10 minutes.
  13. Garnish with parsley and serve with lemon wedges on the side.
  14. Enjoy!

Notes

I used Nut Crumbs brand Lemon Pepper flavor to coat these scallops.  Use pennysprimal to save. 
If you can't wait to make this and do not have nut crumbs you can replace with almond flour mixed with 1 tsp coarse black pepper and the zest from one lemon.
