Instructions

Preheat oven to 375˚: and line a rimmed baking sheet with parchment paper.

Cut the tomatoes into chunks: and place them on the pan with jalapeños, onions, and garlic, spreading evenly over pan.

Drizzle avocado oil: over everything.

Roast for 45 minutes: remove from oven and allow to cool.

Place in high speed blender: with all of the juices, cilantro, salt, cumin, and lime juice. Pulse to desired consistency. I like it finely blended.

Ingredients
  

  • 5 lbs Green Tomatoes cored and cut into evenly sized pieces
  • 4 whole Jalapeño Pepper cored and seeded
  • 1 cup Red Onion cut into 1/8's
  • 6 cloves Garlic peeled and left whole
  • 2 whole Limes juiced
  • 4 Tbsp Avocado Oil or more to give it a hearty drizzle
  • 1 tsp Salt
  • 1 tsp Ground Cumin
  • 1 cup Fresh Cilantro

Method
 

  1. Preheat oven to 375˚ and line a rimmed baking sheet with parchment paper.
  2. Place the cut tomatoes, jalapeño peppers, onions, and garlic on the pan, spreading out evenly.
  3. Drizzle heartily with avocado oil.
  4. Roast for 45 minutes and remove from oven and allow to cool.
  5. Place everything from the pan including the juices, into a high speed blender along with cilantro, salt, cumin, and lime juice. Pulse to desired consistency. I like in finely blended.
