Roasted Green Tomato Salsa is a bright, tangy, and smoky salsa. Roasting underripe green tomatoes with onions, jalapeños, and garlic then blending them with fresh cilantro and citrusy lime juice creating the best condiment for snacking with tortilla chips, on top of tacos, the best burger topping, and more.

Ingredients
  

  • 5 lbs Green Tomatoes cored and cut into evenly sized pieces
  • 4 whole Jalapeño Pepper cored and seeded
  • 1 cup Red Onion cut into 1/8's
  • 6 cloves Garlic peeled and left whole
  • 2 whole Limes juiced
  • 4 Tbsp Avocado Oil or more to give it a hearty drizzle
  • 1 tsp Salt
  • 1 tsp Ground Cumin
  • 1 cup Fresh Cilantro

Method
 

  1. Preheat oven to 375˚ and line a rimmed baking sheet with parchment paper.
  2. Place the cut tomatoes, jalapeño peppers, onions, and garlic on the pan, spreading out evenly.
  3. Drizzle heartily with avocado oil.
  4. Roast for 45 minutes and remove from oven and allow to cool.
  5. Place everything from the pan including the juices, into a high speed blender along with cilantro, salt, cumin, and lime juice. Pulse to desired consistency. I like in finely blended.
