Dried blueberries: are ripe blueberries that have had their moisture removed to create a sweet, chewy, snack often used in baking and salads.

Avocado oil mayonnaise: offers a unique creamy texture and a healthier fat profile.

Salt and black pepper: salt enhances and balances flavors. Meanwhile, ground black pepper adds a gentle heat.

Ingredients
  

  • 1.5 lb Chicken breast roasted and diced
  • 1/4 cup Red onion diced
  • 2 ribs Celery diced
  • 1 whole Granny Smith apple large, diced
  • 1/2 cup Walnuts chopped
  • 1/2 cup Dried blueberries
  • 1/2 cup Avocado oil mayonnaise
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1 tsp Thyme, dried

Method
 

  1. In a small bowl, mix the mayonnaise, salt, black pepper, and thyme together.
  2. In a large bowl, add the diced chicken, diced apples, diced celery, diced onion, and chopped walnuts.
  3. Add the mayonnaise mixture into the chicken salad and stir to coat well.
