Ingredients You Will Need
Rib eye steak: is a flavorful cut of beef known for its rich marbling, tenderness, and deep buttery taste. You can use any steak you prefer. I like Grass Roots Coop for my meat purchases.
Broccoli: is an edible green plant from the cabbage family that has a large flowering head and thick stalk.
Carrot sticks: are carrots that have been peeled, washed and precut for you and they add a natural sweetness to your dish.
Green onions: also known as scallions, they impart a mild, onion-like flavor.
Water chestnuts: are commonly available in most grocery stores, often found canned and can be found sliced or whole.
Glass noodles: made from sweet potato starch, offer a chewy and translucent texture, adding a unique twist to dishes.
Garlic: adds a savory note that enhances the dish with its bold and aromatic flavor.
Coconut aminos: is a gluten free and soy-free alternative to traditional soy sauce.
Sesame oil: commonly used in Asian and Middle Eastern cuisines, it is derived from sesame seeds.
Rice vinegar: is a mild, slightly sweet, low-acid condiment made from fermented rice.
Arrowroot powder: (or flour), a versatile thickening agent in recipes, serves as an excellent alternative to cornstarch or flour without impacting the flavor of a dish.
Salt and black pepper: salt enhances and balances flavors. Meanwhile, ground black pepper adds a gentle heat.
Instructions
Pat the steak dry with paper towels: and slice into thin strips.
Mix in a bowl: coconut aminos, garlic and whisk in arrowroot and set aside.
In another bowl: place the glass noodles in the bowl and pour boiling water over them and allow to sit for 10 minutes. Then drain the water.
Heat the sesame oil in a large pan on medium high: add the steak and cook for two minutes, flip the pieces of steak and cook two minutes longer. Move steak to a plate.
Lower heat to medium: add broccoli, carrots and onions to the pan stirring occasionally for 5 minutes.
Add the coconut aminos mixture: stir well and allow sauce to thicken.
Add the glass noodles: steak slices, water chestnuts, rice vinegar, salt and pepper to the pan and stir to coat with the sauce.
Simmer: another five minutes.
Enjoy!
Recipe Tips and Tricks
Use a tender cut of beef: such as rib eye steak, flank or skirt steak.
Purchase pre-cut carrot sticks: to save time with prepping.
Don’t over cook the broccoli: as it adds a nice texture and crunch when not cooked too much.
Taste before adding the salt: as coconut aminos tend to be salty and you may not need the added salt in your easy beef Lo Mein.
Recipe Variations
Shredded cabbage: makes a great addition to this chicken lo mein providing even more veggies!
Rice noodles: can be used in place of the glass noodles if you are not concerned about keeping this recipe Paleo or Whole30 friendly.
Soy sauce: can be used if you do not have coconut aminos. Keep in mind the dish will not be Paleo or Whole30 if you use soy sauce.
Storage Tips
You can store this easy beef lo mein in the refrigerator for 3-4 days in an airtight glass container.
