I think it’s only fitting that for my very first post I share one of the very first chicken salads I created when I started Whole30 back in 2018.
Apple Almond Chicken Salad is still one of my favorites and I have since created 10+ other chicken salads so you will never get bored with one flavor! Tzatziki Chicken Salad, Curry Chicken Salad, Buffalo Chicken Salad, Gyro Chicken Salad and Chicken Cherry Walnut Salad just to name a few! I make a big chicken salad every weekend and I meal prep lunches having it with some raw veggies on the side. It’s the perfect Whole30 lunch as it gives you your protein, veggies, fat and fruit all in one bowl! I love all the textures in this salad like crispy apples, chewy cranberries, tender chicken and crunchy almond slivers!
INGREDIENTS
2 large boneless chicken breasts, roasted & cubed, I like Greensbury Market
3 celery ribs, diced
1/2 cup sweet onion, diced
1 apple, cored & diced
1/2 cup dried cranberries, unsweetened
1/2 cup slivered unsalted almonds
2 tsp thyme
1 tsp salt
1/2 tsp pepper
1 tbsp fresh lemon juice
1/2-3/4 cup mayonnaise
