Peach Vinaigrette

Peach season is the best! Am I right? I'm taking full advantage with this refreshing Peach Vinaigrette! It's light and has a delicious nutty flavor from the almond oil. No almond oil? No worries, you can use olive oil. I like to serve this drizzled over an heirloom tomato and peach salad with fresh basil! Watch it disappear!


1 large peach, peeled, pitted and chopped
1/2 cup almond oil, I like Fresh Vintage Farms
(or 1/2 cup olive oil)
1/4 cup white wine vinegar
1/2 tsp salt
1 tbsp date syrup or 1 large date, pureed

Combine all ingredients in a blender

Blend until smooth and creamy

Store in glass jar in refrigerator
