Why You’ll Love This Recipe

Creamy potatoes and onions with a crispy topping has all the best textures and flavor in every bite. Everyone will love this delicious twist on a classic Potato and Onion Casserole recipe.

Ingredients You Will Need

White Potatoes: are a starchy root vegetable. They have a very white or tan skin and a medium starch with a slightly creamy texture. The skin is very delicate and perfect for this casserole.

Vidalia Onion: are a sweet onion with a mild flavor and higher sugar content. They are perfect for when you don’t want the bold pungent flavor of a yellow onion to stand out in a recipe.

Eggs: Eggs are a good source of protein and vitamins and are one of the few foods that should be classified as “superfoods”. They help bind the Potato and Onion Casserole together nicely.

Ghee: Incorporating ghee into this sauce adds a rich, nutty flavor. Ghee is clarified – meaning impurities have been removed, resulting in a pure and clear form of butterfat with lower lactose content than butter. I really like Fourth and Heart Ghee.

Nutritional Yeast: Different from regular yeast, nutritional yeast adds a cheesy flavor to dishes without the need for dairy, making it a popular choice in vegan or dairy-free recipes.

Flat Leaf Parsley: brings a burst of fresh, herby goodness to soups, giving them a nice lift and adding a bit of vibrant flavor to your casserole.

Salt and Black Pepper: The flavor of a dish is enhanced by salt. It elevates various flavor profiles. Ground black pepper adds a gentle heat.

Paprika: Unlike smoked paprika, it is a little sweeter.

Italian Nut Crumbs: These can be a fun alternative to traditional breadcrumbs. Pairing nut crumbs with this casserole is a delightful choice. Nut Crumbs is my favorite brand.

Avocado Oil Spray: Is very versatile and has a neutral flavor that can be used for baking, high-heat cooking, sautéing and frying.

Instructions

Melt ghee: in a large skillet to start the Potato and Onion Casserole.

Add potatoes: and onions and cook till potatoes are soft and onions are translucent. Be careful not to brown the onions as you want them to remain sweet and not caramelize.

Preheat oven: to 350˚.

Allow potato and onions: to cool for about 10 minutes, do not skip this step to ensure a perfect casserole.

While cooling: whisk eggs in a bowl and stir in nutritional yeast, salt, pepper and parsley. The mixture will perfectly complement the flavors of your Potato and Onion Casserole.

Spray your casserole dish: well with avocado oil being sure to get the sides too.

Pour: potato mixture into casserole dish.

Now add: the egg mixture over top of the potatoes and onions.

Mix: nut crumbs with paprika and sprinkle over top of casserole. This will give your Potato and Onion Casserole a delightful crunch.

Spray: again with avocado oil.

Bake: 30 minutes or until knife inserted in center comes out clean.

Enjoy!

Recipe Tips and Tricks

Use a mandolin: to make the potatoes and onions uniform in thickness. This ensures even cooking in your Potato and Onion Casserole.

Recipe Variations

Cheese: you can use shredded cheese in place of the nutritional yeast if you are not concerned about keeping this recipe dairy free.

Italian Bread crumbs: would be a good substitute for the Nut Crumbs in this Potato and Onion Casserole.

Storage Tips

You can store this Potato and Onion Casserole in the refrigerator for up to 5 days in a glass air-tight container.

Glass bakeware is heavier and slower to heat than metal, but once it is hot, it retains that heat for much longer.
