    Whole30 Chicken Noodle Soup

    Soup season is my favorite. I especially love to have a batch of this Chicken Noodle Soup in the freezer at all times! No one likes to wake up not feeling well and then have to think about cooking! With this soup on hand not only will you feel better but you don’t have to cook! I even make double batches as it freezes so well! Soups are my favorite. If you love soup like me try my Dairy Free Ham and Potato Soup or my Shepherd's Pie Soup.

    You will love having a batch of chicken noodle soup in your freezer for when the dreaded cold season hits. The smell of this soup alone will make you feel better.

    Ingredients You Will Need

    Chicken breast: is a lean cut of meat that can be baked, grilled or poached. Some say it can be difficult to cook because it's lean and can become dry. I love Grass Roots Coop for their pasture raised organic chicken breast. You can use PENNYP to save 15%.

    Carrots: As a root vegetable, they are a perfect candidate for roasting. They infuse a soup with a natural sweetness and robust flavor. Add some to your delicious chicken noodle soup.

    Celery: CeIery is a nutrient rich, low calorie food that has fiber and vitamin K, small amounts of A and C, calcium and iron. It is an essential ingredient for making Mirepoix. This is an aromatic base of celery, carrots and onions.

    Onion: I prefer yellow onion for this recipe as it has a bolder flavor than sweet onions. However, you can certainly use sweet if you prefer, especially in something like chicken noodle soup.

    Garlic: Fresh is best for obtaining a little stronger touch of garlic flavor. It provides a stronger touch than the sweeter touch you would obtain from powder.

    Chicken bone broth: You have the option of using either chicken bone broth or regular chicken broth.     Salt and pepper: Salt enhances and balances flavors, while ground black pepper adds a gentle heat. This improves the overall flavor of a dish.

    Ghee: Incorporating ghee into this sauce adds a rich, nutty flavor. Ghee is clarified butter which means the impurities have been removed. Thus, it results in a pure and clear form of butterfat with lower lactose content than butter.

    Double this recipe: You'll be so happy you doubled this Chicken Noodle Soup and put some away in the freezer. When cold and flu season strikes, and you just don’t feel like cooking, it has saved me many times!

    Whole roasted chicken: Purchase a ready made roasted chicken and use what you need for the soup. Then make a chicken salad with the leftovers!

    Organic onion: If you purchased organic onions, throw the skins in the soup as they help give this chicken noodle soup a rich golden color. Just be sure to discard before serving.

    Recipe Variations

    Spaghetti: If you are not concerned about keeping this Chicken Noodle Soup Paleo or Whole30 friendly you can use any pasta you choose! Try star shaped pasta as it is usually a big hit for the little ones in the family.

    Chicken broth: You can use chicken broth in place of the bone broth or you can use vegetable broth if you prefer. This is especially great for variations of chicken noodle soup.

    To store the Whole30 Chicken Noodle Soup, place it in an airtight container and refrigerate for up to 5 days. You can also freeze this soup for up to 6 months.

    Ingredients
      

    • 2 lb Boneless Skinless Chicken Breasts cooked & shredded
    • 4 Carrots sliced
    • 4 pieces Celery sliced
    • ½ cup Yellow Onion diced, about 1 small onion
    • 3 cloves Garlic minced
    • 8 cups Chicken Bone Broth
    • 14 ½ oz Hearts of Palm Spaghetti
    • ½ Dill, fresh chopped or 1 tablespoon dried dill
    • 1 tablespoon Turmeric Powder
    • 1 teaspoon Salt
    • 1 teaspoon Black Pepper
    • 1 tablespoon Ghee

    Instructions
     

    • Melt ghee in a large pot
    • Add onions & saute till soft
    • Add garlic & stir one minute
    • Add broth, celery & carrots & bring to a slow boil
    • Add chicken, "noodles" & spices
    • Simmer on low about 30 minutes
