    Chicken and Gnocchi Soup

    This Chicken and Gnocchi Soup is a hug in a bowl with it's creamy broth and pillowy soft cauliflower gnocchi! It's a quick and easy soup that comes together in less than an hour so it's perfect for any night of the week! This soup is an updated version of Turkey and Cauliflower Gnocchi Soup.     Ingredients You Will Need

    Ghee: incorporating ghee into this sauce adds a rich, nutty flavor. I love Fourth and Heart ghee and you can use Pennysprimal15 to save 15%.

    Onion: yellow onion has a bolder flavor than sweet onions but you can certainly use sweet if you prefer. In chicken and gnocchi soup, a yellow onion works wonderfully.

    Carrots: are root vegetables that are perfect for roasting or infusing a soup with a natural sweetness and robust flavor.

    Celery: is a nutrient rich, low calorie food that has fiber and vitamin K, small amounts of A and C, calcium and iron. It is an essential ingredient for making Mirepoix which is an aromatic base of celery, carrots and onions used in chicken and gnocchi soup.

    Salt and Black Pepper: salt enhances the overall flavor of the dish and ground black pepper adds a gentle heat.

    Thyme: is a pungent herb that can withstand longer cooking times in stews and soups and adds a depth of flavor.

    Poultry Seasoning: is a blend of herbs and spices typically used to enhance the flavor of poultry dishes. I like Noble Made's organic poultry seasoning. You can use Pennysprimal15 to save 15%.

    Chicken Bone Broth: can be used or regular chicken broth; the bone broth offers enhanced health benefits along with a richer flavor profile.

    Coconut Cream: is ideal for dairy-free dishes, providing a creamy texture with a taste that is very mild and usually hidden by other flavors.

    Peas: frozen peas are used in this recipe as they are super easy to use and have a deliciously sweet flavor profile.

    Cauliflower Gnocchi: from Trader Joe's is available in the freezer section and happens to be a personal favorite. Of course, any gnocchi you enjoy can be used for this recipe!

    Instructions

    Melt the ghee: in large pot.

    Cook the aromatics: by adding the onions, celery & diced carrots to the pot and cooking till soft. These base ingredients will transform your soup, providing a delicious start to your chicken and gnocchi creation.

    Now add: the poultry seasoning, thyme, salt and pepper and stir in.

    Pour in the chicken broth: and allow it to come to a boil then lower heat to a simmer.

    Immersion blend: till veggies are smooth.

    Add: the sliced carrots and simmer 10 minutes.

    Slowly add: the coconut cream, stirring till combine. It blends perfectly with the chicken and gnocchi soup components.

    Now add the chicken: gnocchi and peas to the pot, stir to combine.

    Simmer: for 15 minutes.

    Be sure to lower the heat to simmering: before adding the coconut cream so it does not separate from heating up too fast. This ensures a smooth chicken and gnocchi soup.

    Turkey: is a great alternative for the shredded chicken as is ground chicken or turkey.

    Gnocchi: can be used in place of the cauliflower gnocchi. Especially if you are not concerned about keeping this recipe Paleo or Whole30 friendly.

    You can store this Chicken and Gnocchi Soup in the refrigerator for 4-5 days in an airtight glass container. It also freezes well for up to 6 months, making sure you always have chicken and gnocchi soup ready when desired.

    Ingredients
      

    • 2 tablespoon Ghee
    • ½ cup Onion diced
    • 5 Carrots 2 diced (for mirepoix) & 3 sliced
    • 2 pieces Celery diced
    • 1 teaspoon Salt
    • 1 teaspoon Black Pepper
    • 1 teaspoon Thyme Dried
    • 1 teaspoon Organic Poultry Seasoning
    • 2 - 3 cups Chicken breast or turkey, pre-cooked and shredded
    • 6 cups Chicken Bone Broth or chicken broth
    • 14 ½ oz Coconut Cream
    • 2 cups Peas Green, frozen
    • 12 oz Cauliflower Gnocchi frozen, Trader Joe's

    • Melt the ghee in large pot

    • Add spice
    • Add chicken broth & bring to a boil
    • Lower heat & immersion blend till veggies are smooth

    • Add coconut cream, stirring till combined
    • Add shredded chicken, gnocchi & peas
    • Simmer 15 minutes
