    Dilly Cabbage and Potato Soup

    Ingredients You Will Need

    Green cabbage: also known as cannonball cabbage, is leafy, crunchy, cheap, and nutritious, especially when added to dilly soup.

    Onion: yellow onion has a bolder flavor than sweet onions, but you can certainly use sweet if you prefer.

    Carrots: are root vegetables that are perfect for roasting or infusing a soup with a natural sweetness and robust flavor.

    Yukon gold potatoes: are a starchy root vegetable that provides energy, potassium, and vitamin C, ideal for dilly cabbage soup.

    Chicken broth: can be used, or chicken bone broth.

    Salt and pepper: salt enhances the overall flavor of dilly cabbage and potato soup, and ground black pepper adds a gentle heat.

    White wine vinegar: is known for its distinctive tangy flavor and the perfect addition to this dish in place of white wine.

    Dill: is herby, light, and refreshing, with a slightly sweet element of parsley, celery, and anise.

    Dairy-free sour cream: is made with almond milk and offers a great dairy-free option.

    Instructions

    Melt ghee: in a large pot.

    Add: onion and shredded cabbage, cover and cook, stirring occasionally till cabbage softens.

    Place potatoes and carrots in the pot and pour broth over top for this delicious dilly cabbage and potato creation. Bring to a boil.

    Lower heat: and simmer 10 minutes.

    Add: salt, pepper, and vinegar, stirring to combine.

    Gently: incorporate the sour cream and dill until the sour cream melts in.

    Simmer: 5 minutes longer.

      • 6 cups Green Cabbage chopped
      • 2 cups Onion diced large
      • ¼ cup Ghee
      • 3 Carrots peeled & sliced
      • 6 - 8 Yukon Gold Potatoes medium, peeled & cubed
      • 6 cups Chicken Broth Low Sodium
      • 2 teaspoon Salt
      • 1 teaspoon Black Pepper
      • 2 tablespoon White Wine Vinegar
      • 3 tablespoon Dill Fresh, chopped
      • 1 cup Dairy-Free Sour Cream Alternative
