    Bacon Cheeseburger Soup

    Are you a soup lover? I am team soup all year round and have been creating soup recipes since I was a teenager! This Bacon Cheeseburger Soup is like ordering a burger and fries in a bowl! It even has the ketchup and dill pickles! I am so excited for you to try this one.  Try some of my other delicious soups like this Shepherd's Pie Soup or how about this Chicken and Gnocchi Soup.

    You will feel good knowing your family is getting a hearty bowl full of protein and vegetables all in serving! It's even better when you serve up this delicious soup for a cozy, warm dinner reminiscent of a bacon cheeseburger.

    Ingredients You Will Need

    Ground Beef: imparts a hearty flavor and juicy texture that perfectly complements the rich, savory notes of the soup. I like Grass Roots Coop for my meats and you can use PENNYP to save 15%.

    Bacon: is a salt-cured pork product made from various cuts of the pig, usually the belly or less fatty parts of the back.

    Cashew Cheese Sauce: is a sauce made from cashews, lemon juice and garlic. You can also purchase cashew cheese sauce ready made from the store.

    Beef bone broth: or beef broth can be used. I like Kettle and Fire and you can use pennysprimal to save 20%.

    Potatoes: are a starchy root vegetable and are a nutrient powerhouse that provide energy, potassium and vitamin C.

    Carrots: are root vegetables that are perfect for roasting or infusing a soup with a natural sweetness and robust flavor.

    Onion: yellow onion has a bolder flavor than sweet onions but you can certainly use sweet if you prefer.

    Garlic: adds a savory note that enhances the dish with its bold and aromatic flavor.

    Coconut cream: is ideal for dairy-free dishes, providing a creamy texture with a taste that is very mild and usually hidden by other flavors.

    Salt and pepper: salt enhances the overall flavor of the dish and ground black pepper adds a gentle heat.

    Ketchup: unsweetened ketchup allows the true sweetness from the tomatoes to shine through.

    Dill pickle slices: are small cucumbers that have been preserved in vinegar flavored with dill. They add a great texture to bacon cheeseburger soup.

    Instructions

    Cook the bacon: in a large pot till crisp and move to a paper towel lined plate.

    Discard: all but 2 tablespoon of the bacon fat.

    Add onion: and cook till soft. It's a flavor base for creating delicious cheeseburger soup.

    Cook: the beef till no longer pink.

    Stir in: the garlic.

    Place the potatoes: carrots and ketchup in the pot and pour the broth over, bringing it to a boil.

    Lower and simmer: for 15 minutes.

    Pour in the cashew cheese sauce: coconut cream, salt and pepper.

    Stir well: and simmer for 10 minutes.

    Garnish: with bacon and dill pickle slices.

    What kind of potatoes should I use in Bacon Cheeseburger Soup?

    Any kind of potato will work, however waxy potatoes like red potatoes hold their shape better than Russet. Russet and other starchy varieties will absorb more flavor and help to thicken the soup.

    What is a good side for Bacon Cheeseburger Soup?

    Thick crusty bread is a delicious option, or a small salad.

    Ingredients
      

    • 1 lb Ground Beef
    • 8 pieces Bacon cut in 1" pieces
    • 1 cup Cashew Cheese Sauce
    • 4 cups Beef Bone Broth
    • 2 cups Potatoes Russet, diced
    • 2 Carrots sliced
    • ½ cup Onion diced
    • 1 clove Garlic minced
    • 13 ½ oz Coconut Cream
    • 1 teaspoon Salt
    • 1 teaspoon Black Pepper
    • ½ cup Ketchup
    • 12 pieces Dill Pickle Slices for garnish
