Method
- Cook bacon in a large pot till crisp and move to a paper towel lined plate.
- Discard all but 2 tbsp of bacon fat.
- Add onion and cook till soft.
- Cook the beef till no longer pink.
- Stir in your garlic.
- Place the potatoes, carrots and ketchup in the pot and pour the broth over, bringing it to a boil.
- Lower and simmer 15 minutes.
- Pour in the cashew cheese sauce, coconut cream, salt & pepper.
- Stir well and simmer 10 minutes.
- Garnish with bacon and pickle slices.
