Do you love soups? I am team soup all year round and have been creating soup recipes since I was a teenager! This Bacon Cheeseburger Soup is like ordering a burger and fries in a bowl! It even has the ketchup and dill pickles! I am so excited for you to try this one.

Ingredients
  

  • 1 lb Ground Beef
  • 8 pieces Bacon cut in 1" pieces
  • 1 cup Cashew Cheese Sauce
  • 4 cups Beef Bone Broth
  • 2 cups Potatoes Russet, diced
  • 2 Carrots sliced
  • 1/2 cup Onion diced
  • 1 clove Garlic minced
  • 13 1/2 oz Coconut Cream
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1/2 cup Ketchup
  • 12 pieces Dill Pickle Slices for garnish

Method
 

  1. Cook bacon in a large pot till crisp and move to a paper towel lined plate.
  2. Discard all but 2 tbsp of bacon fat.
  3. Add onion and cook till soft.
  4. Cook the beef till no longer pink.
  5. Stir in your garlic.
  6. Place the potatoes, carrots and ketchup in the pot and pour the broth over, bringing it to a boil.
  7. Lower and simmer 15 minutes.
  8. Pour in the cashew cheese sauce, coconut cream, salt & pepper.
  9. Stir well and simmer 10 minutes.
  10. Garnish with bacon and pickle slices.
  11. Enjoy!
