    Cherry Sauce for Pork (or anything!)

    Cherry Sauce for Pork - simple, and too good not to try on all things! This decadent sauce will have you licking your plate clean! Just a few simple ingredients and you have a delicious cherry-based sauce not only for grilled meats but for pancakes, ice cream and more! Love a good fruit sauce?     Ingredients You Will Need

    Cherry fruit spread: is similar to jam or preserves, made primarily from cherries. I like St. Dalfour as they are refined sugar free and loaded with pieces of fruit.

    Fresh cherries: are small round, stone fruits that grow on trees and come in a variety of colors.

    Extra virgin olive oil: stands out as an excellent choice for sautéing, adding richness and enhancing the natural flavors of foods. I love Garcia De La Cruz for my olive oil.

    Shallot: are a type of onion that are a member of the allium family. Closely related to garlic, chives, and onions, they have a mild, savory flavor with garlic undertones that enhance cherry sauce for pairing with pork.

    Chicken bone broth: is a type of stock, but unlike regular stock, bone broth is simmered longer extracting more collagen. I like Kettle and Fire for both broth and bone broth. You can use pennysprimal to save.

    White wine vinegar: has a mild, fruity flavor and balanced sweet and sour taste. I love Olivelle for all of their vinegars. You can use pennysprimal to save.

    Dried thyme: is a pungent herb that can withstand longer cooking times in stews and soups and adds a depth of flavor.

    Garlic powder: is best for when you want a milder flavor that will incorporate easily.

    Ingredients
      

    • 8 oz Cherry fruit spread I like St. Dalfour
    • 1 cup Fresh cherries pitted and cut in half
    • 1 tablespoon Extra virgin olive oil I like Garcia De La Cruz
    • 1 Shallot peeled and minced fine
    • 1 cup Chicken bone broth I like Kettle and Fire
    • 1 tablespoon White wine vinegar I like Olivelle Prosecco Italian White Wine Vinegar
    • 1 teaspoon Thyme, dried
    • 1 teaspoon Garlic powder
    • 1 teaspoon Salt
    • ½ tsp Black pepper
    • 4 scoops Adapt Collagen Optional
    • 2 tablespoon Parsley, fresh chopped for garnish, optional

    Instructions
     

    • Pit and cut the cherries in half, set aside.
    • Peel and mince the shallot.
    • Heat the olive oil in a sauce pan.
    • Add the shallots and cook till soft being careful not to brown them.
    • Add the chicken bone broth and bring to a boil. Reduce heat and simmer till it reduces by half. This will take about 10 minutes.
    • Add the fruit spread, fresh cherries, vinegar, salt, pepper, garlic powder and thyme, stirring well and simmer on low for five minutes, stirring occasionally.
    • Stir in collagen till dissolved and remove from heat.
    • Enjoy!
