Pit and cut the cherries in half, set aside.
Peel and mince the shallot.
Heat the olive oil in a sauce pan.
Add the shallots and cook till soft being careful not to brown them.
Add the chicken bone broth and bring to a boil. Reduce heat and simmer till it reduces by half. This will take about 10 minutes.
Add the fruit spread, fresh cherries, vinegar, salt, pepper, garlic powder and thyme, stirring well and simmer on low for five minutes, stirring occasionally.
Stir in collagen till dissolved and remove from heat.
