Apple Almond Chicken Salad

This Apple Almond Chicken Salad is still one of my favorites. It's perfect for meal prepping for lunches too. It’s the perfect Paleo and Whole30 lunch as it gives you your protein, veggies, fat and fruit all in one bowl! I love all the textures in this salad like crispy apples, chewy cranberries, tender chicken and crunchy almond slivers!

Ingredients
  

  • 2 lb Chicken Breast Skinless and boneless
  • 3 ribs Celery diced
  • ½ cup Vidalia Onion diced
  • 1 whole Apple Pink Lady or apple of your choice, cored and diced
  • ½ cup Dried Cranberries Unsweetened
  • ½ cup Almonds Blanched, Slivered, unsalted
  • 2 teaspoon Thyme Dried
  • 1 tablespoon Lemon Juice
  • ½ cup Avocado Oil Mayonnaise more if needed
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper

Instructions
 

  • Roast your chicken if you do not have pre-cooked ready to go.
  • Cube the roasted chicken breast into small bite size pieces.
  • Toss diced apples in lemon juice, set aside.
  • Combine mayonnaise in large bowl with all spice, mix well.
  • Add chicken, onion, celery and cranberries, tossing well.
  • Add apples and almonds, tossing gently with rubber spatula so almonds don’t break apart.
  • Enjoy!
