Apple Cider Pork Shoulder (slow cooker)

Are you ready for the best Slow Cooker Apple Cider Pork Shoulder that is Paleo and Whole30 friendly? It's a savory, juicy, fall off the bone meal thats deliciously sweet from the apple cider and apples without any refined sugar added! The carrots mixed with the apples are so sweet and tender that even the kids will love them!

Ingredients
  

  • 3 lb Pork Shoulder I like bone in from Grass Roots
  • 6 whole Carrot cut in 2" pieces
  • 1 head Garlic peeled and leave cloves whole
  • 1 whole Red Onion peeled and cut in wedges
  • 2 Tbsp Dijon Mustard
  • 3 whole Pink Lady Apples cored and cut in thick slices
  • 2 cups Apple Cider unsweetened
  • 2 cups Beef Bone Broth I like Kettle & Fire
  • 3 sprigs Fresh Thyme
  • 2 sprigs Fresh Rosemary
  • 1 tsp Salt
  • 1/2 tsp Black Pepper

Method
 

  1. Place the onion wedges on the bottom of the slow cooker along with the cut carrots and whole garlic cloves.
  2. Pat the pork shoulder dry with paper towels and place on top of the veggies.
  3. Spread the Dijon mustard over the pork and sprinkle with salt and black pepper.
  4. Pour the apple cider and beef bone broth around the pork.
  5. Lay the sprigs of rosemary and thyme around the pot.
  6. Slow cook on low for 8 hours or on high for 6 hours.
  7. Once the pork is fork tender, remove it to a rimmed sheet pan and shred the meat with two forks.
  8. Pour some of the juices from the pot over the pork and allow it to rest for 10 minutes.
  9. If you want to thicken the juices, strain the liquid into a pan and add a slurry of 1 tbsp arrowroot powder and 1 tbsp juice and add to saucepan and bring to a boil. Reduce heat to simmer and allow to thicken.
  10. Serve with the apples and veggies and pour the sauce over top.
  11. Enjoy!
