Do you love soups? I am team soup all year round and have been creating soup recipes since I was a teenager! This Bacon Cheeseburger Soup is like ordering a burger and fries in a bowl! It even has the ketchup and dill pickles! I am so excited for you to try this one.

Ingredients
  

  • 1 lb Ground Beef
  • 8 pieces Bacon cut in 1" pieces
  • 1 cup Cashew Cheese Sauce
  • 4 cups Beef Bone Broth
  • 2 cups Potatoes Russet, diced
  • 2 Carrots sliced
  • ½ cup Onion diced
  • 1 clove Garlic minced
  • 13 ½ oz Coconut Cream
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • ½ cup Ketchup
  • 12 pieces Dill Pickle Slices for garnish

Instructions
 

  • Cook bacon in a large pot till crisp and move to a paper towel lined plate.
  • Discard all but 2 tablespoon of bacon fat.
  • Add onion and cook till soft.
  • Cook the beef till no longer pink.
  • Stir in your garlic.
  • Place the potatoes, carrots and ketchup in the pot and pour the broth over, bringing it to a boil.
  • Lower and simmer 15 minutes.
  • Pour in the cashew cheese sauce, coconut cream, salt & pepper.
  • Stir well and simmer 10 minutes.
  • Garnish with bacon and pickle slices.
  • Enjoy!
