This chicken taco salad is a Tex-Mex favorite that combines all the savory flavors of a traditional chicken taco into a fresh, crunchy, and customizable salad. Loaded with protein it combines seasoned chicken, crisp greens, a variety of your favorite taco toppings, and a creamy homemade 4 ingredient dressing. It's Paleo and Whole30 friendly simply by omitting the cheese. The whole family will absolutely devour this one!

Ingredients
  

  • 1 lb Chicken thighs boneless, skinless, cut into bite sized pieces
  • 3 Tbsp Taco seasoning or our Fajita Seasoning recipe
  • Avocado oil spray
  • 8 oz Romaine lettuce chopped, I used boxed baby romaine
  • 1.5 cup Cherry tomatoes cut in half
  • 1 cup Black olives cut in half
  • 1 cup Cheddar cheese shredded, or omit for Paleo and Whole30
  • 1/2 cup Red onion diced
  • 1/4 cup Fresh cilantro chopped, garnish, optional
  • 1 whole Lime cut in wedges, garnish, optional

Method
 

  1. Cut the chicken into bite sized pieces and pat dry with paper towels.
  2. In a bowl, wearing a rubber glove, mix the spice into the chicken, massaging well to coat the pieces evenly.
  3. Spray the air fryer basket with avocado oil.
  4. Lay the chicken pieces in a single layer in the basket. Its okay if they touch slightly as the chicken will shrink a bit in cooking. Spray again with oil.
  5. Air fry at 365˚ for approximately 20 minutes, flipping halfway through. Not all air fryers cook at the same rate so watch the chicken for doneness. It should read 165˚ on a meat thermometer.
  6. While the chicken cooks, make the taco dressing and set aside. Prepare the salad bowls by dividing the salad ingredients evenly into 4 bowls.
  7. Once the chicken is cooked, divide into four equal portions and place on each salad.
  8. Garnish with the chopped cilantro and lime wedges if desired and serve with the dressing on the side.
  9. Enjoy!
