Chopped dill pickle slaw is a tangy, crunchy, and savory twist on traditional coleslaw that is especially perfect as a topping for burgers, tacos, and BBQ, or as a side dish. It incorporates chopped dill pickles and pickle brine and fresh dill into a creamy mayonnaise base. Pickle lovers will devour this delicious slaw!

Ingredients
  

  • 4 cups Green Cabbage chopped fine
  • 1 cup Carrot sticks chopped
  • 1/2 cup Dill pickles diced
  • 1/4 cup Dill pickle juice
  • 1 Tbsp Dijon mustard
  • 1 Tbsp Lemon juice
  • 1/3 cup Avocado mayonnaise
  • 2 Tbsp Fresh dill chopped
  • 1/2 tsp Garlic powder
  • 1 tsp Salt
  • 1/2 tsp Black pepper

Method
 

  1. Chop the cabbage finely and add to a large bowl.
  2. Chop the carrot sticks and add to the bowl.
  3. Dice the pickles and add to the bowl.
  4. In a small bowl combine the mayonnaise, Dijon mustard, lemon juice, pickle juice, fresh chopped dill, salt, pepper, and garlic powder. Whisk well.
  5. Pour the dressing over the slaw mix and toss well.
  6. Enjoy!
