This creamy chicken & mushroom pasta made with chick pea pasta is hearty, easy and delicious!

Ingredients
  

  • 1 lb Ground Chicken
  • 8 oz Chickpea Pasta I like Banza
  • 16 oz Mushroom Chicken Bone Broth I like Kettle & Fire, see notes
  • 8 oz White Mushrooms sliced
  • 13 1/2 oz Coconut Cream
  • 1/2 cup Onion diced
  • 1 tsp Garlic Powder
  • 1 tsp Salt
  • 1 tsp Black Pepper

Method
 

  1. Cook your pasta according to directions on box, drain and set aside
  2. Meanwhile, in a large skillet add chicken and onions and cook till chicken is no longer pink
  3. Add salt, pepper and garlic
  4. Add mushrooms, cover and simmer on low for ten minutes
  5. Add broth and stir well
  6. Add coconut cream and stir well and simmer for 5 minutes
  7. Add cooked pasta to pan and stir to combine
  8. Let heat through about 5 minutes

Notes

You can use chicken bone broth or chicken broth in place of mushroom chicken bone broth.
