This cucumber and dill salad is a crisp, refreshing side dish combining thinly sliced cucumbers, fresh dill, onions, seasoning, all tossed in a dairy-free sour cream. It's a Paleo and Whole30 friendly dish!

Ingredients
  

  • 4 whole Pickling cucumbers if using another variety you may not need 4, sliced thinly on mandolin
  • 1 whole Vidalia onion medium in size, sliced thinly on mandolin
  • 4 Tbsp Fresh dill chopped
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1/2 cup Sour cream alternative dairy free

Method
 

  1. Slice the cucumbers thinly on a mandolin. I like to leave the skin on for added crunch.
  2. Slice the onion thinly on a mandolin.
  3. Chop the fresh dill.
  4. Combine all of the ingredients in a bowl and toss to combine.
  5. Enjoy!
