This curry chicken salad is a protein-packed, savory-sweet and creamy dish bursting with flavors. Crunchy celery, sweet raisins, savory onion and warm spices create the perfect make ahead salad everyone will love!

Ingredients
  

  • 4 cups Chicken breast cooked and cubed
  • 4 Sprigs Celery diced (4 ribs)
  • 1/2 cup Onion diced
  • 1/2 cup Raisins (must be unsweetened for Whole30)
  • 3/4 cup Avocado oil mayonnaise
  • 1 whole Lime small, juiced
  • 2 Tbsp Curry powder
  • 1/2 tsp Ginger ground
  • 1 tsp Salt
  • 2 Tbsp Cilantro chopped

Method
 

  1. In a small bowl, combine the mayo, curry, ginger, salt, cilantro and lime juice mixing well.
  2. In a large bowl, combine the diced chicken, celery, onions and raisins, mixing well.
  3. Stir in the dressing and toss well to coat.
  4. Enjoy!
