This Dairy Free Cauliflower Soup (2 Ways) is sure to please everyone at your table! Enjoy the original version with crispy bacon crumbles OR spice it up and add some buffalo sauce!

Ingredients
  

  • 2 Large heads Cauliflower cut in florets
  • 3 pieces Celery diced
  • 1/2 cup Onion diced
  • 3 cloves Garlic peeled & crushed
  • 1 cup Raw Cashews soaked in water 2 hours & drained
  • 1/4 cup Nutritional Yeast
  • 1 Tbsp Lemon Juice
  • 3 Tbsp Ghee
  • 2 cups Organic Chicken Bone Broth or chicken broth
  • 13 1/2 oz Coconut Cream
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 6 - 8 pieces Bacon cooked crisp & crumbled for garnish

  • 1/2 cup Medium Buffalo Sauce I like Noble Made

Method
 

  1. Melt ghee in a large pot
  2. Add onions & celery & cook till soft
  3. Add garlic & stir one minute
  4. Add cauliflower & bone broth, cover & bring to a boil, lower & simmer till cauliflower is fork tender
  5. Meanwhile add drained cashews, lemon juice & nutritional yeast to high speed blender till creamy - add a little water if too thick
  6. Immersion blend cauliflower till creamy
  7. Add salt, pepper, coconut cream &
  8. Cheese sauce, stirring to combine
  9. Simmer on low 10 minutes
  10. Serve with crumbled bacon
  11. Recipe 2: add buffalo sauce & stir well
