Ingredients
Method
- Melt ghee in a large pot
- Add onions & celery, cook till translucent
- Add garlic, stirring one minute
- Add 4 cups of broth & half the potatoes
- Bring to a boil & cook till potatoes are soft
- Immersion blend (or high speed blender) till creamy
- Add remaining broth, ham, carrots, potatoes & spice (see note on salt)
- Simmer till potatoes & carrots are tender
- Add coconut cream (or almond milk) & simmer 10 minutes
- Enjoy!
Notes
Do not salt till end as some ham can be quite salty and you may not need any extra.
