Method
- Place all of the herbs in a food processor and chop till fine but don't over process.
- Cool the boiled potatoes and cut in 1/4's.
- Place the warm potatoes in a large bowl.
- Add herbs and shallot mixing with a rubber spatula.
- In a small bowl, whisk together broth, oil, vinegar, Dijon, salt and pepper.
- Pour over potatoes and mix gently. Serve warm or cold.
- Excess liquid will absorb into salad.
- Enjoy!
