These sweet and sticky, finger licking good, grilled mango chicken thighs have the best flavor and the chicken always comes out tender and juicy with a crispy, flavorful outside. Made with boneless, skinless chicken so they grill up in under 20 minutes!

Ingredients
  

  • 8 pieces Boneless Skinless Chicken Thigh
  • 2 Mangos peeled & diced large
  • 1/4 cup Coconut Aminos
  • 1/4 cup Ketchup I like Noble Made
  • 3 cloves Garlic peeled
  • 2 tsp Ginger Root minced
  • 1 tsp Gochugaru Korean chili pepper flakes
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1/4 cup Cilantro chopped for garnish
  • 2 Limes cut in wedges for garnish

Method
 

  1. Combine in a blender, mangos, coconut aminos, ketchup, garlic, ginger, salt, pepper & chili flakes till smooth
  2. Place chicken thighs in a zip lock bag and pour marinade over and marinate over night for best flavor
  3. Heat grill to 400°.
  4. Cook chicken 5-7 minutes per side or till thickest part reaches 165 degrees on a thermometer
  5. Plate with fresh mango slices or Mango Salsa
  6. Garnish with chopped cilantro & lime wedges if desired
