Healthy Zuppa Toscana

Zuppa Toscana has been a favorite of ours for over 30 years! I love the depth of flavor this soup brings to the table. Sausage, creamy red potatoes, kale with spices and a creamy broth! There's a secret ingredient in mine. Trust me on this one! I know your family will love this cozy bowl full as much as mine!

Ingredients
  

  • 8 oz Bacon cut in 1" pieces
  • 1 1/4 lb Mild Italian Sausage ground
  • 1 1/2 lb Baby Potatoes I used red, cut in 1/4
  • 5 oz Baby Kale or Baby Spinach
  • 1 cup Onion diced
  • 3 pieces Celery diced
  • 4 Carrots sliced
  • 3 cloves Garlic minced
  • 13 1/2 oz Coconut Cream
  • 4 cups Chicken Bone Broth or chicken broth
  • 1 Tbsp Basil, dried
  • 1 Tbsp Chili Powder
  • 1 tsp Salt see note
  • 1/2 tsp Black Pepper

Method
 

  1. Crisp bacon pieces in large pot
  2. Move to plate on paper towel
  3. Remove all but 2 tbsp of bacon fat from pot
  4. Add sausage to bacon fat & break apart cooking till just browning
  5. Add onions & celery, cooking till onions are translucent
  6. Add garlic, stirring one minute
  7. Add basil, chili powder and pepper
  8. Add potatoes, carrots & broth
  9. Cover & bring to a boil
  10. Lower & simmer till potatoes and carrots are soft
  11. Add coconut cream stirring to combine
  12. Add kale stirring till wilted
  13. Garnish with bacon
  14. Enjoy!
