These herby plantain croutons are crunchy, gluten-free, salad toppers made from diced, air-fried, green plantains. A savory, low-sugar alternative to bread croutons. They are perfect for salads, soups, or as a healthy snack.

Ingredients
  

  • 2 whole Plantain not overly ripe
  • 1 Tbsp Avocado Oil
  • 1 tsp Little Palates Herb Garden Seasoning - Primal Palate see note
  • 1 tsp Kosher Flake Salt

Method
 

  1. Peel and cut the plantains into small cubes.
  2. Toss in a bowl with the avocado oil.
  3. Add the spice and salt, tossing well to coat evenly.
  4. Place in air fryer set to 350˚.
  5. Cook 10-15 minutes shaking every 5 minutes until desired crispness is achieved.
  6. Enjoy!

Notes

You can make your own herb garden seasoning mix for this recipe by mixing 1/4 teaspoon each of garlic powder, onion powder, dried parsley, and oregano.
