Jerk chicken and mango cups are a vibrant, tropical light meal featuring savory, spicy ground chicken tossed in jerk seasoning, paired with sweet diced mango, red bell peppers, and served in buttery soft lettuce leaves. The whole family is going to love them!

Ingredients
  

  • 1 lb Ground chicken
  • 1 Tbsp Extra vrgin olive oil
  • 1/2 cup Red onion diced
  • 1 whole Red bell pepper diced
  • 3 Tbsp Coconut aminos
  • 2 cloves Garlic minced
  • 1 Tbsp Ginger Root minced
  • 1/4 cup Cilantro chopped
  • 1 Tbsp Jerk Seasoning see recipe
  • 1 whole Mango diced
  • 6 - 8 pieces Butter lettuce leaves to use as "cups"
  • 1 whole Lime cut in wedges for garnish

Method
 

  1. Heat olive oil in a skillet.
  2. Add the ground chicken, diced onion, diced pepper, and cook till chicken is no longer pink.
  3. Add the coconut aminos, minced garlic, minced ginger root, and jerk seasoning, stirring for one minute.
  4. Add the diced mango and chopped cilantro and stir to incorporate just long enough to warm the mango slightly.
  5. Fill the butter leaves and garnish with lime wedges.
  6. Enjoy!
