Lemon Basil Grilled Chicken with Balsamic Strawberries

You can make this Lemon Basil Grilled Chicken with or without the Balsamic Strawberries but I highly recommend you don’t skip them because this combination is incredibly delicious. The chicken is so flavorful from the marinade and the strawberries add a burst of tangy sweetness that completes this dish. I like to serve it over fresh arugula and pile on extra strawberries because why not!

Ingredients
  

  • 1 1/2 lb Skinless Chicken Breast or thighs
  • 1/4 cup Extra Virgin Olive Oil
  • 1/4 cup Lemon Juice
  • 3 cloves Garlic minced
  • 1/2 cup Basil, fresh chopped
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • Balsamic Strawberries:
  • 4 cups Strawberries diced
  • 1/4 cup Balsamic Vinegar
  • 1/4 cup Basil, fresh chopped
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 Tbsp Medjool Date Syrup see note

Method
 

  1. Cut chicken breast in half lengthwise if thick
  2. Place in zip lock bag
  3. Whisk together oil, lemon juice, garlic, salt & pepper
  4. Pour over chicken
  5. Zip bag closed squeezing out air
  6. Massage chicken well
  7. Refrigerate 3 hours or over night
  8. Meanwhile combine all of the Balsamic Strawberries ingredients in a bowl and mix well
  9. Heat grill
  10. Cook chicken 4-6 minutes per side depending how thick they are or till thickest part reaches 165 degrees
  11. Remove from grill, cover with foil and let rest for 5 minutes
  12. Spoon strawberries over
  13. Enjoy!

Notes

To keep this recipe Whole30 compatible use 3-4 Medjol dates pureed instead of syrup.
