Fruit Salsas are so summery and so versatile! I love this Pineapple Salsa thats sweet and so delicious on just about anything! Grilled chicken, pork chops, shrimp or even fish tacos! It is not spicy but feel free to add jalapeño if you want the heat. Oh and this salsa would be amazing with cinnamon tortilla chips too!

Ingredients
  

  • 4 cups Pineapple peeled and diced small
  • 1/2 cup Red Onion diced
  • 1 Yellow Bell Pepper or orange, seeded and diced
  • 1/2 cup Cilantro chopped fine
  • 2 Tbsp Mint Leaves chopped fine, or more to taste
  • 1 tsp Kosher Flake Salt
  • 1/2 tsp Black Pepper

Method
 

  1. Peel the pineapple and dice it into small pieces.
  2. Seed the pepper and dice it into small pieces.
  3. Peel and dice the red onion.
  4. Chop the cilantro and fresh mint.
  5. Combine all ingredients in a bowl and stir to combine.
  6. Let stand at least 30 minutes before serving.
  7. Enjoy!
