This roasted lemon thyme chicken is sure to become a family fave! It's deliciously flavored with lemon, thyme, garlic and golden brown crispy skinned chicken that is fall off the bone juicy! It's the perfect weeknight dinner yet fancy enough to serve to company.

Ingredients
  

  • 8 pieces Chicken thigh with skin and bone
  • 5 cloves Garlic sliced thin
  • 2 Tbsp Fresh thyme chopped
  • 16 oz Chicken bone broth I like Kettle and Fire
  • 2 whole Lemons 1 juiced, 1 sliced
  • 1 tsp Smoked paprika
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1 Tbsp Arrowroot powder

Method
 

  1. In a large bowl mix the chicken broth, lemon juice, garlic slices, thyme, smoked paprika, salt and pepper.
  2. Place the chicken pieces into the bowl, cover and marinate for 3 hours (or overnight if you have time).
  3. Preheat the oven to 450 degrees.
  4. Move the chicken pieces to an oven safe baking dish- do not discard the marinade.
  5. Stir the arrowroot powder into the remaining marinade and whisk it well then pour it over the chicken pieces.
  6. Roast the chicken for 55-60 minutes or until the skin is golden brown and crispy.
  7. In the last 5 minutes add the lemon slices around the chicken pieces.
  8. Enjoy!
