This sesame lime chopped salad is a bright, crunchy, and refreshingly tangy side dish with a delicious nutty, citrus-forward dressing.

Ingredients
  

  • 6 cups Green cabbage chopped fine
  • 4 cups Purple cabbage chopped fine
  • 1 cup Carrots cut into carrot sticks, and chopped
  • 5 pieces Green onion scallion, diced
  • 1/2 cup Cilantro chopped
  • 1 cup Cashews roasted and salted, rough chopped
  • 1 Tbsp Sesame seeds black and white
  • Dressing:
  • 2 whole Lime juiced
  • 1/4 cup Sesame oil
  • 1/4 cup Rice vinegar
  • 1 Tbsp Ginger root chopped
  • 1 tsp Salt
  • 1/4 cup Medjool dates chopped
  • 2 clove Garlic

Method
 

  1. Combine all of the salad ingredients in a large bowl.
  2. Blend the dressing ingredients in a high speed blender till smooth.
  3. Pour dressing over the salad and toss well.
  4. Garnish with sesame seeds.
  5. Enjoy!
