Southwest Steak Salad

This Southwest Steak Salad with tender skirt (or flank) steak that has been marinated in my Southwest Seasoning. It is so flavorful and tender and takes about 15 minutes to grill. Slice it up and top your favorite salad. I always go for fresh and crunchy and this salad packs a lot of crunch! Top it off with your favorite dressing.

Ingredients
  

  • 1/2 lb Flank Steak or skirt steak
  • 1/4 cup Avocado Oil
  • 1 Tbsp Southwest Seasoning click for recipe, see my recipe
  • 1/2 Lime large lime, juiced
  • Salad
  • 2 cups Broccoli Slaw
  • 2 cups Red Cabbage shredded
  • 2 cups Carrot Sticks
  • 1 Red Bell Pepper large one, sliced in thin strips
  • 1 Red Onion sliced in thin wedges
  • 1 Lime cut in wedges for garnish

Method
 

  1. Place steak in a zip lock bag with oil, lime juice and seasoning, massage well and marinate over night
  2. Assemble salad bowls with 1/2 cup each of broccoli slaw, cabbage, carrots and some pepper slivers
  3. Add onions and lime wedges
  4. Grill steak for approximately 6-8 minutes per side depending on how thick your meat is
  5. We like medium rare so 125° at thickest part
  6. Cover steak with foil and let rest 5-8 minutes
  7. Slice steak against the grain thinly
  8. Place steak on salad
  9. Drizzle your favorite dressing, see note
