This Summer Crunch Salad is my favorite way to use up those end of summer vegetables and herbs from the garden. It is a vibrant, refreshing dish made with crisp cucumbers, sweet cherry tomatoes, sharp radishes, and sweet red bell peppers, tossed with fresh parsley and chives, and finished with a simple dressing of olive oil and lime juice.

Ingredients
  

  • 1 whole Cucumber peeled and cut into 1/4's sliced
  • 20 whole Cherry Tomatoes cut in half
  • 8 whole Radish trimmed and cut into half moons
  • 1 whole Red Bell Pepper seeded and ribs removed then diced small
  • 1/4 cup Fresh Parsley chopped
  • 1/4 cup Fresh Chives cut into 1/8-1/4" pieces
  • 1 whole Lime juiced
  • 1/4 cup Extra Virgin Olive Oil
  • 1 tsp Salt
  • 1/2 tsp Black Pepper

Method
 

  1. Peel the cucumber and cut into 1/4's or half moons depending on the variety of cucumber used.
  2. Wash and trim the radishes slicing thinly into half moons.
  3. Remove the seeds and ribs from the bell pepper and dice evenly.
  4. Cut the cherry tomatoes in half.
  5. Chop the fresh parsley finely.
  6. Chop the fresh chives into 1/8-1/4" pieces.
  7. Place all of the vegetables and herbs into a bowl.
  8. Pour over the lime juice and olive oil.
  9. Add the salt and black pepper and toss the salad gently with a rubber spatula.
  10. Enjoy!
