Is there anything better than deliciously, cold coleslaw in the summer? This Sweet & Sour Pineapple Slaw is full of crunch and flavor and screams summer! We actually eat it all year round. This slaw is perfect on all things grilled and especially delicious on fish tacos! You have to try it.

Ingredients
  

  • 3 cups Green Cabbage chopped fine
  • 3 cups Red Cabbage chopped fine
  • 1 cup Carrot Sticks chopped
  • 1 cup Pineapple diced
  • 1/2 cup Red Onion diced
  • 1/2 cup Cranberries, dried unsweetened
  • 1/2 cup Sunflower Seeds roasted & salted
  • Dressing
  • 1 cup Pineapple diced
  • 1/2 cup Avocado Oil Mayonnaise
  • 1/4 cup Apple Cider Vinegar
  • 1 Tbsp Dijon Mustard
  • 1 tsp Black Pepper
  • 1 tsp Salt only if sunflower seeds are unsalted

Method
 

  1. Combine all salad ingredients in a large bowl and toss well
  2. In a blender combine dressing ingredients till creamy
  3. Pour over slaw and toss well
  4. Enjoy!
