This sweet and spicy mango chicken recipe features tender ground chicken coated in a vibrant, sticky sauce made from blended ripe mangoes, coconut aminos, ginger root, rice vinegar, and red pepper flakes. Serve it over rice or in lettuce wraps, and enjoy the perfectly balanced tropical sweetness with savory heat.

Ingredients
  

  • 2 lb Ground chicken I like Grass Roots
  • 2 Tbsp Sesame oil
  • 1 Tbsp Arrowroot powder
  • 1 Tbsp Water
  • 1 tsp Sesame seeds for garnish, I used black sesame seeds
  • 2 pieces Green nnion scallion, sliced for garnish
  • Sauce:
  • 1 whole Mango peeled, pitted and cut in pieces
  • 1/4 cup Coconut aminos
  • 4 Tbsp Rice vinegar
  • 2 Tbsp Ginger root minced
  • 2 tsp Gochugaru Korean Chili Pepper Flakes

Method
 

  1. Heat the sesame oil in a frying pan.
  2. Cook the ground chicken, breaking apart, till it is no longer pink.
  3. Meanwhile, combine all of the sauce ingredients in blender till smooth.
  4. Once chicken is crumbly and browned a bit add the sauce and bring to a slow boil then lower the heat.
  5. Whisk together arrowroot and water to make a slurry.
  6. Add the slurry to the pan and mix well, simmering until the sauce thickens.
  7. Garnish with sesame seeds and green onions.
  8. Enjoy!
