    Cucumber Radish Salad

    Jump to Recipe Print Recipe

Elevate your summer table with this refreshing Cucumber Radish Salad. Marrying the satisfying crunch of thinly sliced radishes with crispy Persian cucumbers. Tossed in a dairy free creamy sour cream dressing infused with fragrant chives and dill. I especially love this salad when the radishes and cucumbers are fresh from the garden (or your neighbor's who so generously shares)! Here is another delicious summer salad to try, Arugula Nectarine Salad.

    Why You'll Love This Recipe

This cucumber radish salad isn't just a dish; it's a delightful celebration of summer flavors that also happens to be naturally gluten free. Plus, this is one of those recipes where no cooking is required! It's cool, crisp and crunchy and makes the perfect accompaniment to your summer grill out spread. It's super easy to whip up, coming together in no time.

    Ingredients You Will Need

White rectangular plate filled with whole Persian cucumbers, whole radishes, chives and fresh dill. There are two small ramekins above it - one filled with dairy-free sour cream and the other has salt and pepper.

Radishes: provide a refreshing crunch and a mildly peppery bite, adding vibrancy and texture to this cucumber radish salad.

Persian Cucumbers: have a thin skin, minimal seeds, and crunch.

Forager Project Diary-Free Sour Cream Alternative: This is a plant-based option with a creamy texture and tangy taste, providing a delicious substitute for traditional sour cream.

Chives: add a subtle oniony flavor and a touch of freshness.

Dill: Fresh dill complements the creamy dressing wonderfully, imparting a subtle herbal freshness to this cucumber radish salad.

Salt and Pepper: salt enhances the overall flavor of the dish and ground black pepper adds a gentle heat.

    Instructions

Make your dressing: in a small bowl, combine the sour cream, chives, dill, salt and pepper. Mix everything together until you have a smooth and creamy cucumber radish salad dressing.

Mix it all together: in a separate large mixing bowl, add the cucumbers, radishes and sour cream mixture. Toss everything well with a rubber spatula. *To keep the salad crisp, salt the cucumbers on paper towels for an hour to remove excess moisture if not serving immediately.

    Enjoy!

    Recipe Tips and Tricks

Optimal Seasonal Flavors: For an extra burst of flavor for this cucumber radish salad recipe, try to source radishes and cucumbers when they're in season or acquire them from a local farmers' market. Freshly picked produce tends to offer superior taste and texture, elevating the overall quality of the salad.

Not eating immediately? If you're not diving into the salad immediately, consider sweating the cucumbers. Lay them on paper towels, sprinkle with salt, and let them sit for about an hour. This process helps draw out excess moisture from the cucumbers, preventing the salad from becoming overly watery and helping to maintain its crispness.

    Recipe Variations

Not a fan of fresh dill? Try swapping this out for fresh parsley in this cucumber radish salad instead!

Okay with a little dairy? Try this alternative: Swap the dairy-free sour cream with Greek yogurt for a different flavor and slightly tangy variation.

Looking for some acidity? Incorporate a splash of red wine vinegar to liven up the creamy dressing, adding a subtle tangy note and brightening the overall flavors of this creamy cucumber salad. You could also add in a squeeze of lemon juice too.

    Storage Tips

You can store this cucumber radish salad in the fridge for 4-5 days when placed in a sealed airtight glass container.

    FAQs About Cucumber Radish Salad

Can you eat radishes with cucumber?

Yes you can! Radishes and cucumbers bring a satisfying mix of textures and flavors when combined in salads. Their unique crunch—radishes with a peppery bite and cucumbers offering refreshing crispness—blend together wonderfully in a cucumber radish salad.

Can you eat raw radish in a salad?

Absolutely! Raw radishes are a go-to for salads, offering a refreshing crunch and a hint of peppery goodness. Sliced, chopped or shaved, they contribute a unique texture and a subtle kick to the cucumber radish salad.

    What pairs well with radish?

Radishes play well with an array of ingredients in salads. They harmonize with leafy greens like arugula or spinach, fresh herbs such as dill or chives, zesty citrus flavors like lemon or lime, and creamy components like yogurt or sour cream-based dressings. They're also delicious on their own as a crunchy snack, or enjoy them dipped in hummus or your favorite dressing.
