Apple Turkey Burgers with Brie

These delicious apple turkey burgers with melted brie and caramelized shallots are so savory and remind me of a brisk fall day!  You won’t only find a few thinly sliced wedges of tart granny smith apples on top of the burgers. There is also shredded apple mixed into the burgers as well, making them the most tender and juiciest burgers ever!   Be sure to whip up the 4 ingredient Dijon Sauce for drizzling over the burgers as the perfect topping!  It’s also delicious for dipping your fries in or, as pictured here, crispy smashed potatoes. Ingredients You Will Need

Organic Ground Turkey: I prefer to use organic ground turkey meat as it provides a healthier and more environmentally- friendly alternative to conventionally raised options. Granny Smith Apple: Granny Smith apples have a light green skin and are firm and juicy. They have a tart, acidic-like flavor and are my apple of choice for this recipe. They do not brown quickly once cut.

Dijon Mustard: Dijon mustard is my preferred choice for this recipe. It imparts a subtle tanginess but also adds a vinegary note, mimicking the characteristic influence of wine in this recipe.

Shallot: Shallots are a type of onion that are a member of the allium family. Closely related to garlic, chives and onions. Having a mild, savory flavor with garlic undertones.

Sage: Sage is actually a member of the mint family. It has an earthy, sweet-yet-savory flavor that makes the perfect addition to any robust dish.

Thyme: Thyme is a pungent herb that can withstand longer cooking times in stews and soups. It adds a depth of flavor. Thyme compliments the tartness of the apples and the tang of the Brie cheese in this recipe.

Salt and Pepper: Salt enhances and balances flavors, while ground black pepper adds a gentle heat, improving the overall flavor of a dish.

Extra Virgin Olive Oil: Olive oil stands out as an excellent choice for sautéing. It adds richness and enhances the natural flavors of foods with its versatility.

Brie Cheese: Brie cheese is a soft, creamy cheese made of cow’s milk having a white mold rind that is edible. The cheese itself is rich and buttery with a creamy texture.

Avocado Oil Mayonnaise: This mayo is made from avocado oil, unlike many common mayo crafted with other oils. It offers a unique creamy texture and a healthier fat profile.

Coconut Aminos: A gluten-free and soy-free alternative to traditional soy sauce. Coconut aminos bring a rich umami flavor and a subtle saltiness and sweetness to a dish.

Instructions

Prepare the Sauce: Whisk the sauce ingredients in a small bowl and set aside,

Cook the Shallot: Heat half of the oil in a pan over medium heat. Add the sliced shallots and cook slowly tossing frequently until they are nicely browned. This takes about 15 minutes. Once browned moved to a paper towel lined plate.

Prepare the Burgers: Meanwhile, combine turkey, grated apple, Dijon, thyme, sage, salt and pepper. Mix with hands to combine but do not overwork the mix. Make 4 burger patties

Cook the Burgers: Add remaining oil to pan and allow it to heat up. Add burgers to pan and cook for 4 minutes covered. Flip burgers and cook for 2 minutes.

Dress the Burgers: Divide onions evenly over the 4 burgers. Add brie slices to top of onions, cover and cook about 2-3 minutes longer or until brie is nicely melted. Burger temperature should read 165˚ at thickest part

Garnish the Burgers: Remove to plate and add apple slices to top of burgers.

Recipe Tips and Tricks

Cook the shallots ahead of time: You can prepare the shallots up to a few days ahead of time. Keep them refrigerated until ready to use, saving on cooking time the day of!

Remove the rind from the Brie: While the rind is edible, I like to remove it for this recipe. This results in a smoother melted cheese on top of the burgers.

Recipe Variations

Ground Chicken: This recipe is just as delicious with ground chicken instead of ground turkey.

Goat Cheese: Not a fan of Brie? Use goat cheese or even feta. Just note that while it will soften, it will not melt into a pool of gooey goodness as you’d expect from the Brie.

Storage Tips

Ingredients
  

  • 1 lb Organic Ground Turkey or ground chicken, I like Grass Roots Coop
  • 1 Granny Smith Apple cored but not peeled, 1/2 grated and 1/2 thinly sliced
  • 2 tsp Dijon Mustard
  • 1/2 tsp Sage, dried
  • 1/2 tsp Thyme, dried
  • 1/2 tsp Salt
  • 1/2 tsp Black Pepper
  • 5 Shallots large, peeled and sliced thinly
  • 3 Tbsp Extra Virgin Olive Oil divided
  • 3 oz Brie Cheese sliced into thin wedges, omit to keep this Whole30 and Paleo friendly
  • Dijon Sauce:
  • 1/2 cup Avocado Oil Mayonnaise
  • 2 Tbsp Dijon Mustard
  • 1 tsp Coconut Aminos
  • 1/4 tsp Thyme, dried

Method
