Peaches: are a fleshy fruit with a sweet, yellowish or whitish flesh and a thin fuzzy skin, and a single pit. Known as a stone fruit they are enjoyed fresh, cooked or canned.
Shallot: are a type of onion that are a member of the allium family. Closely related to garlic, chives and onions. Having a mild, savory flavor with garlic undertones.

Instructions




Preheat oven: to 350˚ and line a rimmed pan with parchment paper.
Pat chicken: pieces dry with paper towels and place them on the pan.
Slice the peaches: into 1/4″ wedges and place around the chicken.
Peel: the shallot and cut into 1/4’s and place around the pan.
Remove: the skin from the garlic cloves, leaving them whole, and place around the pan.
Chop: the basil leaves.
In a small bowl: whisk the olive oil, balsamic, basil, salt and pepper.
Pour: the marinade over the chicken to coat and drizzle the remaining over the peaches, shallots and garlic.
Bake for 60 minutes or till the chicken skin is crispy and golden brown. Chicken should read 165˚ at thickest part.
Drizzle: with extra peach balsamic before serving and garnish with basil if desired.
