    Creamy Taco Soup

    Jump to Recipe Print Recipe

This Creamy Taco Soup has been the most popular recipe on the blog since the first time I shared it! It's bursting with flavor, hearty and so delicious. Everyone that has made it comments they make it over and over again. You must try this one! It makes a nice big pot full. You will have plenty of leftovers to freeze for those days when you just don’t feel like cooking! Try some of my other delicious soups too!

    Why You'll Love This Recipe

Plenty of leftovers: This creamy taco soup makes a nice big pot full. It is particularly helpful while doing a Whole30 round. You can freeze some for another week or simply enjoy it all week long for lunches!

Made all in one pot: No messing up the whole kitchen with a bunch of pots and pans. Only one pot to clean up!

    Ingredients You Will Need

Ground beef: Ground beef works wonders in this soup. It imparts a hearty flavor and juicy texture. This perfectly complements the rich, savory notes of the sauce in your creamy taco soup.

Onion: I prefer yellow onion for this recipe as it has a bolder flavor than sweet onions. However, you can certainly use sweet if you prefer.

Avocado oil: Avocado oil is extracted from the pulp of the avocado. It is delicious and nutritious and easy to use.

Salsa: Using jarred salsa in this soup allows you to choose your preferred heat level. It works wonderfully in a taco soup that is creamy and delicious.

Bell pepper: The cooking process enhances the natural sweetness and the heat softens the peppers. Yet, they still maintain a pleasant crunch.

Fire roasted diced tomatoes: Fired roasted diced tomatoes are charred over an open flame. They add a smoky flavor to the dish. They can be purchased canned and are ready to use making it super easy and quick.

Tomato sauce: Tomato sauce can refer to many different sauces made primarily from tomatoes. Use your favorite canned or jarred sauce for this recipe or try my roasted tomato sauce.

Coconut cream: Coconut cream is ideal for dairy-free dishes. It provides a creamy texture with a taste that is very mild. The flavor is usually hidden by other ingredients. Opting for coconut cream over coconut milk helps create taco soup that is extra creamy.

Coconut milk: Coconut milk is simply coconut cream that has a little more coconut water added to it.

Nutritional yeast: Different from regular yeast, nutritional yeast adds a cheesy flavor to dishes without the need for dairy. It is a popular choice in vegan or dairy-free recipes.

Cilantro: This bright and fresh herb adds a refreshing touch that complements the spicy-sweet blend of this soup perfectly.

Salt and pepper: Salt enhances and balances flavors, while ground black pepper adds a gentle heat. This improves the overall flavor of a dish.

    Instructions

In a large pot: Heat your oil.

Add beef and onion: Breaking apart beef and cooking till beef is no longer pink and onions are translucent.

Add bell pepper: Add peppers and stir to combine.

To the pot: Add tomatoes, sauce, salsa & nutritional yeast, stirring well.

Add: Salt and pepper, stir to combine.

Cover pot: Simmer on low for 30 minutes, allowing the flavors in the creamy taco soup to meld.

Add: Coconut cream and coconut milk, stirring to combine.

Add: Add your cilantro & simmer 15 minutes more on low heat.

Enjoy! Serve your creamy taco soup hot, and enjoy with your favorite toppings.

      Recipe Tips and Tricks

You control the heat: The best part about this recipe is it uses jarred salsa so you get to choose your heat level. Like it mild, choose a mild salsa. Like it hot, choose a hot salsa!

Serve with: Fresh avocado slices and sour cream make the best topping for this soup. Serve with your favorite tortilla chips for dipping! I love Siete grain free tortilla chips.

      Recipe Variations

Instead of ground beef: You can use ground chicken or turkey instead of beef. You can even use shredded chicken if you like in your creamy taco soup version.

Coconut cream/milk: Allergic or not a fan of coconut cream? Swap it for the milk of your choice or even cream if you are not concerned about using dairy.

Nutritional Yeast: If you do not like nutritional yeast you can add cashew "cheese" sauce to keep it dairy free or some cheese of your choice if you are not dairy free.

      Storage Tips

To store the Creamy Taco Soup, place it in an airtight container and refrigerate. The soup can also be frozen for up to 6 months. Consider freezing in ice cube trays like these. This will help freeze your Creamy Taco Soup in smaller portions making it easier and quicker to defrost.

      FAQs About Creamy Taco Soup

What is taco soup made of?

Typically, beef, pinto beans, corn, diced tomatoes and chili peppers. My version is Whole30 and paleo friendly so corn and beans are not used. Feel free to add them if you do not have a dietary preference.

      Why is soup so popular?

Not only does it make our taste buds happy, but it provides a hug in a bowl. This warms the soul and keeps us calm, positive and fulfilled, especially when it's a creamy taco soup.
