This Cauliflower Cheese Soup 2 Ways is sure to please everyone at your table! Enjoy the original version with crispy bacon crumbles OR spice it up and add some buffalo sauce! It's almost like buffalo cauliflower bites but in a creamy cozy bowl of soup! This soup is made with my Cashew Cheese sauce making it completely dairy free. It freezes well if you are lucky enough to have leftovers.
2 large heads of cauliflower, cut into florets
3 ribs celery, diced
1/2 cup onion, diced
3 cloves garlic, peeled and crushed
1 cup raw cashews, soaked in water for 2 hours & drained
1/4 cup nutritional yeast
1 tbsp fresh lemon juice
3 tbsp ghee
2 cups chicken bone broth or broth, I like Kettle & Fire
13.5 oz coconut cream
1 tsp salt
1 tsp pepper
6-8 slices bacon, cooked crisp & crumbled for garnish
1/2 cup buffalo sauce

Melt ghee in a large pot
Add onions & celery & cook till soft
Add garlic & stir one minute
Add cauliflower & bone broth, cover & bring to a boil, lower & simmer till cauliflower is fork tender
Meanwhile add drained cashews, lemon juice & nutritional yeast to high speed blender till creamy - add a little water if too thick
Immersion blend cauliflower till creamy
Add salt, pepper, coconut cream &
cheese sauce, stirring to combine
Simmer on low 10 minutes
Serve with crumbled bacon
