Preheat oven: to 425˚ and line a large rimmed baking sheet with parchment paper.

Ingredients
  

  • 2 head Cauliflower cut into large florets
  • 1/4 cup Extra virgin olive oil
  • 1/4 cup Honey
  • 2 Tbsp Curry powder
  • 1 tsp Garlic powder
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 2 tbsp Fresh cilantro chopped
  • 1 whole Lime cut in wedges

Method
 

  1. Cut the cauliflower into large florets.
  2. Preheat the oven to 425˚ and line a large, rimmed sheet pan with parchment paper.
  3. Whisk in a large bowl, honey, olive oil, curry, garlic powder, salt and pepper.
  4. Add the cauliflower and toss well to coat all of the florets.
  5. Roast for 15 minutes and remove and toss and return to oven for 15 minutes more.
  6. Remove from oven and increase oven temp to 450˚.
  7. Meanwhile, flip the cauliflower pieces so all of the florets are facing up and roast another 10 minutes. This will obtain that golden, crisp texture.
  8. Garnish with chopped cilantro and lime wedges.
  9. Enjoy!
