Almond Joy Bark

This Almond Joy Date Bark is my take on the viral date bark recipe that went around.  Almond Joys were my favorite candy when I was little so it made sense to try this healthier version!  They are refined sugar free and the perfect Paleo treat!  I used Medjool dates, Georgia Grinders cashew butter (because it's the best) and Hu sugar free chocolate for a guilt free and delicious snack.  Warning....they are addicting!

Ingredients
  

  • 20 pieces Medjool Dates pitted and opened flat
  • 1/2 cup Cashew Butter, unsweetened I like Georgia Grinders, see note
  • 30 Almonds, whole raw unsalted
  • 1 cup Coconut, shredded unsweetened
  • 1 cup Dark Chocolate Chips I like Hu unsweetened
  • 1 tsp Organic Coconut Oil
  • 1 pinch Primal Palate Kosher Flake Salt

Method
 

  1. Lay open dates on a piece of parchment paper in rows 4 across and 5 down
  2. Lay a second piece of parchment on top and place your cookie sheet on it and press it down
  3. Remove cookie sheet and roll the dates with a rolling pin
  4. Move to cookie sheet and remove top piece of parchment
  5. Drizzle nut butter over dates and spread with spatula covering the dates
  6. Place almonds in rows
  7. Sprinkle with coconut
  8. Melt chocolate chips with coconut oil in microwave
  9. Drizzle over top and spread with spatula
  10. Sprinkle with salt
  11. Freeze 1-2 hours
  12. Remove from freezer and cut into squares
  13. We like them best when kept refrigerated
  14. Enjoy!
