This Apple Cinnamon Compote is so delicious on so many things! It is the perfect accompaniment to pork, pancakes, waffles, toast, yogurt, ice cream or right out of the jar with a big ole spoon! It is the perfect amount of sweet with a touch of savory and so easy and quick to make.

Ingredients
  

  • 2 Granny Smith Apples large or 3 small
  • 1/4 cup Shallot peeled and diced fine
  • 2 tbsp Ghee
  • 1 Lemon Juiced
  • 10 oz Apple Cinnamon Fruit Spread I like St. Dalfour
  • 1/2 tsp Salt
  • 1/4 tsp Ginger
  • 1/2 tsp Nutmeg
  • 1/2 tsp Allspice

Method
 

  1. Peel, core and dice your apples
  2. Peel the shallot and dice it fine
  3. Juice the lemon
  4. Melt ghee in a skillet
  5. Add shallot and cook 2 minutes
  6. Add apples, fruit spread, lemon juice and spices stirring well to combine
  7. Cook till apples soften and the compote thickens
  8. Enjoy!
