Broccoli Slaw with Cranberries is fantastic way to use up leftover broccoli stems. Loaded with crisp carrots, tangy cranberries, sunflower seeds, tossed in a creamy sweet and sour dressing that everyone loves!

Ingredients
  

  • 4 cups Broccoli slaw or shred your own (3 cups broccoli stems, 1 cup carrot sticks)
  • 1/2 cup Red onion diced
  • 1/2 cup Dried cranberries unsweetened
  • 1/2 cup Sunflower seeds raw
  • 1 cup Avocado oil mayonnaise
  • 1/4 cup Apple cider vinegar
  • 2 Tbsp Medjool date syrup or 4-5 puréed dates
  • 1 tsp Salt
  • 1/2 tsp Black pepper

Method
 

  1. In a large bowl, combine the broccoli slaw, diced red onion, dried cranberries, and sunflower seeds and toss well.
  2. In a small bowl whisk together the mayonnaise, vinegar, date syrup, salt and black pepper.
  3. Pour the dressing over the slaw mixture and toss well to combine.
  4. Enjoy!
