Method
- Preheat oven to 425˚ & line a pan with parchment paper
- Toss cauliflower in oil & sprinkle with salt & pepper
- Roast till fork tender (about 40-45 minutes)
- Meanwhile blend sauce ingredients in high speed blender till smooth & creamy
- In a small bowl mix ghee with nut crumbs
- Cut cauliflower into bite size pieces
- Put into a casserole dish and pour sauce over & stir well
- Sprinkle nut crumbs on top
- Cover with foil & bake in a 350˚ oven for 20 minutes
- Remove foil & bake 10 minutes more
