This Easy Roast Beef is truly foolproof, with a beautifully crisp, flavorful crust on the outside and tender, juicy slices on the inside. A simple combination of garlic, herbs, and olive oil creates incredible flavor without the need for complicated ingredients. And because there's no added sugar, grains, or dairy, this roast is naturally Paleo and Whole30 friendly!

Ingredients
  

  • 4 lb Beef Rib Roast boneless
  • 1/4 cup Extra Virgin Olive Oil or more to rub over entire roast
  • 1 tsp Oregano dried
  • 1 tsp Thyme dried
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1/2 tsp Dry Mustard Powder

Method
 

  1. Take the rib roast out of the fridge 2 hours before cooking to let it come to room temperature. This will allow it to cook evenly.
  2. Preheat the oven to 450˚.
  3. Combine all of the spice in a small bowl.
  4. Rub the roast with olive oil on all sides and coat with the spice mix being sure to cover all sides.
  5. Place the roast on a wire rack in a shallow rimmed baking pan.
  6. Roast for 15 minutes at 450˚ then lower heat to 325˚ and roast for one hour longer or until thermometer reads 125˚ for rare. (see written instructions above for other tempertures)
  7. Remove from oven and cover with foil for 15-20 minutes before slicing to allow the juices to redistribute.
  8. Enjoy!
